Cheesy Funeral Potatoes

Ingredients

  • 4-7 medium to large potatoes
  • 2 cans cream of chicken soup
  • 2 cups of grated cheese
  • 1/3 cup onion flakes
  • 1 pint sour cream (more is ok too)
  • 1 cup crushed corn flakes

Instructions

  1. Peel and boil the potatoes for 20 minutes. Don't cut them and don't over boil them. I usually put the potatoes in just a little before they boil. Preheat oven to 350 degrees.
  2. In a separate pot mix soup, 1 1/2 cups of the cheese, sour cream, and onion flakes. Put the potatoes through cheese grater.
  3. Gently mix the grated potatoes with the soup and put into a buttered cake pan. I use a 9 X 13 pan.
  4. Put the remainder of the cheese on the top of the casserole. Then put the crushed corn flakes on the top.
  5. Bake for at 35o degrees for 45 minutes.
