Zucchini Casserole

Description

This was my grandmother's recipe. It's great for Thanksgiving or Christmas. Can do as an alternate to stuffing.

Ingredients

  • 1/4 cup onion chopped
  • 4 cups zucchini squared
  • 1 can cream of chicken soup
  • 1 8oz package of stuffing (more is fine)
  • 1/3 cup butter
  • 1 cup sour cream
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Cook onion and sliced zucchini in boiling water for 5 minutes or until tender. Drain in a bowl. Preheat oven to 350 degrees.
  2. Combine soup, sour cream, and shredded cheese with vegetables.
  3. Make stuffing according to directions. Stir in butter.
  4. Spray casserole dish and take 1/2 the stuffing and pack the bottom. Then spoon on the soup mixture. Put the remaining half of the stuffing on the top.
  5. Bake at 350 degrees for 25-30 minutes
