Zucchini Casserole

Description
This was my grandmother's recipe. It's great for Thanksgiving or Christmas. Can do as an alternate to stuffing.
Ingredients
1/4 cup onion chopped
4 cups zucchini squared
1 can cream of chicken soup
1 8oz package of stuffing (more is fine)
1/3 cup butter
1 cup sour cream
1/2 cup shredded cheddar cheese
Instructions
Cook onion and sliced zucchini in boiling water for 5 minutes or until tender. Drain in a bowl. Preheat oven to 350 degrees.
Combine soup, sour cream, and shredded cheese with vegetables.
Make stuffing according to directions. Stir in butter.
Spray casserole dish and take 1/2 the stuffing and pack the bottom. Then spoon on the soup mixture. Put the remaining half of the stuffing on the top.
Bake at 350 degrees for 25-30 minutes
