Description

This is my grandmother's signature dish. She would make it for all 90 of her grandkids every Christmas holiday. The secret is in heating the sugar to the right temperature in order to give it a good texture. It also needs a cool dry place to set up properly. Humid areas may have a hard time with this.

Ingredients

  • 2 cups sugar
  • 1/2 cup corn syrup
  • 1/2 cup water
  • 2 egg whites
  • 1 tsp vanilla

Instructions

  1. Combine sugar, corn syrup, and water. Boil to a soft ball stage.
  2. Meanwhile beat the egg whites until they are stiff.
  3. Add 1/2 of the mixture at the soft ball stage.
  4. Cook the other 1/2 of the mixture until it is a hard ball stage. Mix the rest of the mixture together. Spoon onto wax paper and let set up for 20 minutes. Can be wrapped in tin foil and stored at room temperature.
