Overnight Refrigerator Rolls

Description

My grandmother's recipe. The rolls are made at least one night before they are needed and can be kept in the refrigerator for up to two weeks.

Ingredients

  • 1 cup lukewarm water
  • ½ cup melted butter
  • ½ cup sugar plus 1 tablespoon
  • 2 ½ teaspoons of yeast
  • 3 beaten eggs
  • ¾ teaspoon salt
  • 4 cups of bread flour

Instructions

  1. Mix yeast and water and 1 Tablespoon of sugar. Add melted butter, sugar and eggs. Add flour and salt and mix with a spoon. This dough can be left in the refrigerator for up to two weeks. Make dough a day or two ahead. Dough must be chilled to work. Make into rolls, I do crescent rolls. Let raise 3-4 hours and bake at 360 degrees for 10-15 minutes. Punch dough down after 2 hours of making and put back into the fridge.
