Description

Found in Hinckley, UT town cookbook. Hinckley is named after President Hinckley's grandfather, Ira Hinckley. The cookbook committee wrote Sister Hinckley and asked for his favorites.

Ingredients

  • 1 lb pork
  • 1/3 cup vinegar
  • 1 tbsp cornstarch
  • 2/3 cup water
  • 2 tbsp flour
  • 1 1/2 tbsp cornstarch
  • 1 egg white
  • 1/2 cup sliced onion
  • salt
  • 1/2 cup sliced carrots
  • 1/2 cup sugar
  • 1 green pepper or cucumber
  • 1/2 cup pineapple chunks
  • 4 tbsp ketchup

Instructions

  1. Cut 1 pound of pork into 3/4 inch cubes and mix with 1 tablespoon cornstarch, 2 tablespoons flour, 1 egg white and salt. Fry pork in deep fat until brown. Mix together 1/2 cup sugar, 1/3 cup vinegar, and 1 1/2 tablespoons cornstarch, and cook over medium heat until it is thickened. Stir constantly.
  2. In a heated ban, put 3 tablespoons oil and saute 1/2 cup onion, 1/2 cup carrots, both sliced and a green pepper or a cucumber (that has been cut into strips). Don't overcook the vegetables! Add 1/2 cup of pineapple chuncks with the fried and drained pork and sweet and sour sauce and 4 tablespoons tomato catsup. Mix thoroughly and serve hot.
