Sour Cream Chicken Enchiladas

Ingredients

  • 16 0z sour cream
  • 2 cans cream of chicken soup
  • 1 1/2 cup grated cheese
  • 1 (4 oz) can green jalapeño chopped
  • 2 tbsp. hot sauce (optional)
  • 1 - 2 green onions diced
  • Cooked shredded chicken (2 breasts or rotisserie chicken)
  • 12 flour tortillas

Instructions

  1. Mix together sour cream and cream soup. Then add jalapeños and hot sauce. Pour a small amount of sauce in casserole dish to cover bottom.
  2. Dip flour tortillas in sauce and then place chicken, cheese, onion, and spoonful of sauce inside and roll up. Pour remaining sauce on top of tortillas and garnish with cheese and onion.
  3. Bake at 350 degrees for 25 minutes.
